Diatomaceous earth is used as a filter aid when filtering soy sauce using a pressure leaf filter. Diatomaceous earth can adsorb some fine impurities. Pre-coating is to evenly apply a thin layer of diatomaceous earth on the pressure leaf filter before formal filtration to form a stable pre-coating layer. The thickness of the pre-coating layer is generally about 1 to 2 mm, but it should be based on the satisfactory clear filtrate obtained during the pre-coating cycle. Adding means continuously adding diatomaceous earth to the soy sauce during the filtration process. These diatomaceous earths are continuously accumulated on the pre-coating layer to form a loose filter cake, which improves the permeability of the filter cake and can maintain effective filtration for a long time.
